The restaurant’s name derives from the Filipino word for soy sauce, a familiar condiment that embodies the complex and diverse flavors of Filipino cuisine.

(Of her various creations, the most famous one, of which she does not receive enough credit for, is banana catsup).
Orosa’s influence is evident in the pop-up’s menu, which features multi-course meals inspired by her groundbreaking work, as well as global dishes and Filipino favorites. The chefs at Toyo Eatery have meticulously crafted each dish, showcasing their ability to blend traditional and modern flavors while honoring the rich cultural history of the Philippines.
